- 2 cups riced cauliflower (fresh or frozen)
- 1 pound ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup cream cheese, softened
- 1/2 cup beef broth
- 1/4 cup chopped green onions (optional)
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 350°F.
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat, then add garlic powder, onion powder, paprika, salt, and pepper. Stir to combine and cook for another 2 minutes.
- In a large bowl, mix the riced cauliflower, sour cream, cream cheese, and beef broth until well combined. Fold in the cooked ground beef and half of the cheddar cheese.
- Transfer the mixture to a greased 9×13 inch baking dish. Top with the remaining cheddar cheese and mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden. If desired, broil for an additional 2-3 minutes for a crispy top.
- Remove from the oven and let it cool for 5 minutes. Garnish with chopped green onions if using.
Notes
- For added crunch, serve with pork rinds or cucumber slices.
- You can substitute ground beef with ground turkey or chicken for a lighter option.
- For a spicier kick, add diced jalapeños to the beef mixture before baking.
