Ingredients

- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup freeze-dried fruit (such as strawberries, blueberries, or raspberries)
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
Instructions
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in the freeze-dried fruit gently to incorporate.
- In another bowl, mix the graham cracker crumbs with melted butter until well combined.
- Press the graham cracker mixture into the bottom of a lined baking dish to form a crust.
- Spread the cheesecake mixture over the crust evenly.
- Chill in the refrigerator for at least 2 hours to set.
- Once set, cut into bite-sized pieces and serve.
Notes
- Feel free to use any combination of freeze-dried fruits.
- Store leftovers in an airtight container in the refrigerator.
- For a gluten-free version, use gluten-free graham crackers.
