Description

A delightful treat combining foraged berries and elderflower in a jelly terrarium.


Ingredients

  • 1 cup elderflower cordial
  • 2 cups water
  • 1/4 cup sugar
  • 2 tablespoons lemon juice
  • 1 packet gelatin (or agar-agar for a vegan option)
  • Fresh mint leaves for garnish

Instructions

  1. In a saucepan, combine the foraged berries, elderflower cordial, water, sugar, and lemon juice.
  2. Heat the mixture over medium heat until the sugar dissolves and the berries start to break down.
  3. Remove from heat and let it cool slightly.
  4. Sprinkle the gelatin over the mixture and stir until fully dissolved.
  5. Pour the mixture into jars or terrarium containers and refrigerate until set, about 4 hours.
  6. Once set, garnish with fresh mint leaves before serving.

Notes

  • For a vegan option, use agar-agar instead of gelatin.
