Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup erythritol or your preferred keto sweetener
  • 1/4 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 cup fresh strawberries, hulled and sliced
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine almond flour, coconut flour, baking powder, baking soda, salt, and erythritol. Mix well.
  3. In another bowl, whisk together melted butter, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  7. While the cakes are cooling, whip the heavy cream in a mixing bowl until soft peaks form.
  8. In a separate bowl, toss the sliced strawberries with lemon juice and let them sit for 5-10 minutes to release their juices.
  9. To assemble, cut each cake in half horizontally. Layer whipped cream and strawberries between the cake halves and on top.

Notes

  • For a richer flavor, try adding a teaspoon of almond extract to the batter.
  • You can also substitute the strawberries with raspberries or blueberries for a different berry shortcake.
  • Serve with pork rinds or cucumber slices for a crunchy side option.
