- 3 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup fresh strawberries, diced
Instructions
- Preheat your oven to 350°F (175°C) and grease a donut pan.
- In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, baking soda, and salt. Mix well.
- In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced strawberries.
- Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
- Bake for 15-18 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
- Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a sweeter treat, drizzle with a sugar-free glaze made from powdered erythritol and almond milk.
