Instructions
- Begin by cracking the eggs into a bowl and whisking them together with the milk until the mixture is smooth and airy. Season generously with salt and pepper.
- In a medium-sized skillet, heat the olive oil over medium heat until shimmering. Add the chopped spinach and sauté for a minute or two until it becomes tender and vibrant.
- Pour the egg mixture into the skillet, ensuring it covers the spinach evenly. Allow it to cook without stirring for about 3-4 minutes, or until the edges start to firm up.
- Using a spatula, gently lift the edges of the omelet, tilting the pan slightly to let any uncooked egg flow to the perimeter.
