- 4 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- 1/2 cup cooked ground lamb
- 1/2 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy.
- Heat a non-stick skillet over medium heat and add the butter. Allow it to melt and coat the bottom of the pan.
- Pour the egg mixture into the skillet, tilting the pan to spread it evenly. Cook for about 2-3 minutes, or until the edges begin to set.
- Gently lift the edges of the omelet with a spatula, allowing the uncooked egg to flow underneath. Continue cooking for another 2-3 minutes until the top is mostly set but still slightly runny.
- Sprinkle the cooked ground lamb and shredded cheddar cheese over one half of the omelet. If desired, add chopped parsley for extra flavor.
- Carefully fold the other half of the omelet over the filling. Cook for an additional minute until the cheese melts and the omelet is cooked through.
- Slide the omelet onto a plate and serve immediately.
Notes
- For a spicier kick, add a pinch of red pepper flakes or some diced jalapeños to the ground lamb.
- Substitute the ground lamb with cooked sausage or bacon for a different flavor profile.
