A delightful and moist Flourless Orange Pistachio Cake made with whole oranges and ground pistachios, perfect for any occasion.


Ingredients

  • 3 medium oranges (about 1 pound)
  • 1 cup granulated sugar
  • 6 large eggs
  • 1 ½ cups ground pistachios (about 6 ounces)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.
  2. Place the whole oranges in a pot and cover them with water. Bring to a boil, then reduce the heat and simmer for about 1 hour, until the oranges are soft. Drain and let them cool.
  3. Once cooled, cut the oranges in half and remove any seeds. Place the entire oranges (peel and all) in a food processor and blend until smooth.
  4. In a large mixing bowl, whisk together the sugar and eggs until well combined and slightly frothy.
  5. Stir in the orange puree, ground pistachios, baking powder, and salt until fully incorporated.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake for 40-45 minutes, or until the cake is set and a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Once cooled, dust with powdered sugar if desired before serving.

Notes

  • For a more intense orange flavor, add the zest of one orange to the batter.
  • Substitute ground almonds for pistachios for a different nutty flavor, or use a combination of both for added texture.
