  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • 1/4 cup chopped fresh herbs (such as parsley or cilantro, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper, leaving some overhang for easy removal.
  2. In a food processor, combine the chickpeas, tahini, olive oil, eggs, baking powder, garlic powder, onion powder, salt, black pepper, and smoked paprika (if using). Blend until smooth and creamy, scraping down the sides as needed.
  3. If using fresh herbs, fold them into the mixture with a spatula until evenly distributed.
  4. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  5. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes, then use the parchment overhang to lift it out and transfer it to a wire rack to cool completely before slicing.
