- 1 cup cooked and pureed beets (about 2 medium beets)
- 1/2 cup creamy peanut butter or almond butter
- 1/2 cup maple syrup or honey
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, combine the pureed beets, peanut butter, maple syrup, cocoa powder, salt, vanilla extract, and baking soda. Mix until smooth and well combined.
- If using, fold in the dark chocolate chips until evenly distributed throughout the batter.
- Pour the brownie batter into the prepared baking pan and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Allow the brownies to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack before slicing.
Notes
- For a richer flavor, add a teaspoon of espresso powder to the batter.
- Substitute the peanut butter with sunflower seed butter for a nut-free version.
