Ingredients

- 2 cups cream cheese
- 1 cup granulated sugar
- 1 cup heavy cream
- 1 cup ube halaya (ube jam)
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the heavy cream and ube halaya, mixing until well combined.
- Incorporate the eggs one at a time, mixing well after each addition.
- Add the vanilla extract and flour, mixing until just combined.
- Pour the batter into a lined springform pan.
- Bake for 50-60 minutes or until the top is golden brown and the center is slightly jiggly.
- Let it cool to room temperature, then refrigerate for at least 4 hours before serving.
Notes
- For best results, use room temperature ingredients.
- Ube halaya can be found in Asian grocery stores or made at home.
- This cheesecake can be served chilled or at room temperature.
