Ingredients

  • 2 pounds pork belly, cut into 1-inch cubes
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon vinegar
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon cooking oil
  • 4 cloves garlic, finely chopped
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 tablespoons chopped green onions (for garnish)
  • Salt to taste
  • 4 cups leftover white rice
  • 4 cloves garlic, finely chopped
  • 2 tablespoons cooking oil
  • Salt to taste

Instructions

  1. Place the pork belly cubes in a mixing bowl and drizzle with soy sauce, oyster sauce, vinegar, and black pepper. Marinate for at least half an hour.
  2. In a large frying pan, heat cooking oil over medium-high heat. Add the marinated pork belly and fry until golden brown and crispy, about 10 to 15 minutes. Remove from the pan and set aside.
  3. In the same pan, add chopped garlic and sauté until fragrant. Then add diced onion and bell pepper, cooking until softened and translucent.
  4. Return the crispy pork to the pan and stir to combine. Cook together for another 5 minutes, adjusting seasoning with salt as needed.
  5. For the garlic-infused rice, heat cooking oil in a separate skillet over medium heat. Add finely chopped garlic and sauté until golden.
  6. Add leftover rice to the skillet, mixing thoroughly with the garlic. Season with salt and cook for about 5 minutes until heated through.
  7. Plate the sizzling pork on a hot serving dish alongside the garlic-infused rice. Garnish with chopped green onions.
