- 3 to 4 lb whole goose, thawed
- 1 cup duck fat
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 lemon, quartered
- 1 onion, quartered
- 4 cloves garlic, smashed
- 2 cups chicken broth
Instructions
- Preheat your oven to 375°F.
- Rinse the goose under cold water and pat it dry with paper towels. Trim any excess fat from the cavity and prick the skin all over with a sharp knife, being careful not to pierce the meat.
- In a small bowl, mix the duck fat, salt, pepper, rosemary, and thyme. Rub this mixture all over the goose.
- Stuff the cavity of the goose with the lemon quarters, onion quarters, and smashed garlic cloves.
- Place the goose breast-side up on a rack in a roasting pan. Pour the chicken broth into the bottom of the pan.
- Roast the goose in the preheated oven for about 2 to 2.5 hours, or until the internal temperature reaches 165°F in the thickest part of the thigh, basting every 30 minutes.
- Once cooked, remove the goose from the oven and let it rest for at least 20 minutes before carving.
- Serve with your favorite sides and enjoy!

- For a crispy skin, increase the oven temperature to 425°F during the last 20 minutes of roasting.
- Try adding other herbs like sage or marjoram for a different flavor profile.
