  • 3 to 4 lb whole goose, thawed
  • 1 cup duck fat
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 lemon, quartered
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 2 cups chicken broth

Instructions

  1. Preheat your oven to 375°F.
  2. Rinse the goose under cold water and pat it dry with paper towels. Trim any excess fat from the cavity and prick the skin all over with a sharp knife, being careful not to pierce the meat.
  3. In a small bowl, mix the duck fat, salt, pepper, rosemary, and thyme. Rub this mixture all over the goose.
  4. Stuff the cavity of the goose with the lemon quarters, onion quarters, and smashed garlic cloves.
  5. Place the goose breast-side up on a rack in a roasting pan. Pour the chicken broth into the bottom of the pan.
  6. Roast the goose in the preheated oven for about 2 to 2.5 hours, or until the internal temperature reaches 165°F in the thickest part of the thigh, basting every 30 minutes.
  7. Once cooked, remove the goose from the oven and let it rest for at least 20 minutes before carving.
  8. Serve with your favorite sides and enjoy!
