Instructions
- Preheat your oven to 375°F and prepare a baking sheet with parchment paper.
- In a large bowl, mix together the shredded turkey, breadcrumbs, stuffing mix, chopped cranberries, diced celery, diced onion, parsley, garlic powder, thyme, salt, and black pepper until well blended.
- Incorporate the beaten egg and chicken broth, mixing until the ingredients are cohesive; if the mixture appears too crumbly, gradually add more chicken broth until it reaches a moldable consistency.
- Shape the mixture into small balls, roughly 1 to 1.5 inches in diameter, and arrange them on the lined baking sheet.
- Lightly drizzle olive oil over the tops of the turkey bites to enhance flavor and promote browning.
- Bake for 20-25 minutes, or until they turn a lovely golden brown and are thoroughly heated.
- Allow to cool slightly before serving.
