Fereni is a creamy Persian rice flour pudding that is a delightful dessert, perfect for any occasion.

- 1 cup rice flour
- 4 cups whole milk
- 1 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cardamom
- Chopped pistachios and almonds for garnish (optional)
- Ground cinnamon for garnish (optional)
Instructions
- In a medium saucepan, combine the rice flour and 1 cup of the milk. Whisk until smooth and there are no lumps.
- Gradually add the remaining 3 cups of milk to the saucepan, continuing to whisk to combine.
- Place the saucepan over medium heat and add the sugar, salt, vanilla extract, and ground cardamom. Stir constantly until the mixture begins to thicken, about 10-15 minutes.
- Once thickened to a pudding-like consistency, remove from heat and pour the mixture into individual serving bowls or a large dish.
- Allow the fereni to cool at room temperature for about 30 minutes, then cover and refrigerate for at least 2 hours or until fully chilled.
- Before serving, garnish with chopped pistachios, almonds, and a sprinkle of ground cinnamon if desired.
Notes
- For a creamier texture, substitute half of the whole milk with heavy cream.
- You can also add a splash of rose water for a floral note.
- For a chocolate twist, mix in 2 tablespoons of cocoa powder while cooking the mixture.
