Description

Fereni is a creamy Persian rice flour pudding that is a delightful dessert, perfect for any occasion.


Ingredients

  • 1 cup rice flour
  • 4 cups whole milk
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cardamom
  • Chopped pistachios and almonds for garnish (optional)
  • Ground cinnamon for garnish (optional)

Instructions

  1. In a medium saucepan, combine the rice flour and 1 cup of the milk. Whisk until smooth and there are no lumps.
  2. Gradually add the remaining 3 cups of milk to the saucepan, continuing to whisk to combine.
  3. Place the saucepan over medium heat and add the sugar, salt, vanilla extract, and ground cardamom. Stir constantly until the mixture begins to thicken, about 10-15 minutes.
  4. Once thickened to a pudding-like consistency, remove from heat and pour the mixture into individual serving bowls or a large dish.
  5. Allow the fereni to cool at room temperature for about 30 minutes, then cover and refrigerate for at least 2 hours or until fully chilled.
  6. Before serving, garnish with chopped pistachios, almonds, and a sprinkle of ground cinnamon if desired.

Notes

  • For a creamier texture, substitute half of the whole milk with heavy cream.
  • You can also add a splash of rose water for a floral note.
  • For a chocolate twist, mix in 2 tablespoons of cocoa powder while cooking the mixture.
