Description

This easy and cheesy Fajita Chicken Casserole brings together all the flavors of fajitas in a creamy, delicious bake. Perfect for a weeknight dinner or family gathering!


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, sliced into strips
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large onion, sliced
  • 1 packet fajita seasoning (or homemade blend)
  • 1 cup sour cream
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons olive oil
  • Salt and pepper to tasteOptional Add-Ins:
    • 1/2 cup black beans
    • 1/2 cup corn kernels
    • 1 tablespoon lime juice

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • In a skillet, heat olive oil over medium heat. Add sliced chicken, season with fajita seasoning, and cook until browned and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
  • In the same skillet, sauté bell peppers and onions until softened, about 5-7 minutes.
  • In a large mixing bowl, combine cooked chicken, sautéed vegetables, cream cheese, and sour cream. Stir until well combined.
  • Spread the mixture into the prepared baking dish. Top with shredded cheddar and Monterey Jack cheese.
  • Bake for 20-25 minutes until the cheese is melted and bubbly. Broil for 2-3 minutes for a golden top, if desired.
  • Let the casserole rest for 5-10 minutes before serving. Garnish with your favorite toppings and enjoy!
