  • 1/4 cup pure honey
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, finely chopped
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon lemon juice
  • Fresh cilantro leaves, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, blend the olive oil, berbere spice mix, sea salt, and black pepper together.
  3. Add the chicken thighs, ensuring they are thoroughly coated in the spice mixture.
  4. In another bowl, combine the honey, apple cider vinegar, chopped garlic, grated ginger, and lemon juice, stirring until well mixed.
  5. Arrange the seasoned chicken thighs in a baking dish, skin side facing up, and drizzle the honey mixture generously over each piece.
  6. Bake for 35-40 minutes, or until the chicken is tender and the skin turns golden and crispy.
  7. Halfway through the baking time, spoon some of the pan juices over the chicken for added flavor.
  8. After baking, allow the chicken to rest for about 5 minutes before garnishing with fresh cilantro and serving.
