Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, blend the olive oil, berbere spice mix, sea salt, and black pepper together.
- Add the chicken thighs, ensuring they are thoroughly coated in the spice mixture.
- In another bowl, combine the honey, apple cider vinegar, chopped garlic, grated ginger, and lemon juice, stirring until well mixed.
- Arrange the seasoned chicken thighs in a baking dish, skin side facing up, and drizzle the honey mixture generously over each piece.
- Bake for 35-40 minutes, or until the chicken is tender and the skin turns golden and crispy.
- Halfway through the baking time, spoon some of the pan juices over the chicken for added flavor.
- After baking, allow the chicken to rest for about 5 minutes before garnishing with fresh cilantro and serving.
