Ingredients

- 1 cup rolled oats
- 1/2 cup chopped hazelnuts
- 1/2 cup packed pitted dates
- 1/4 cup almond butter
- 1/4 cup honey or maple syrup
- 2 tablespoons espresso powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup dark chocolate chips (optional)
Instructions
- Place the rolled oats, chopped hazelnuts, pitted dates, almond butter, honey (or maple syrup), espresso powder, vanilla extract, and salt into a food processor.
- Blend the mixture until it reaches a sticky and cohesive consistency.
- If using, gently mix in the dark chocolate chips.
- Take small portions of the mixture and shape them into bite-sized balls, roughly 1 inch in diameter.
- Arrange the formed bites on a baking sheet lined with parchment paper.
- Chill them in the refrigerator for at least 30 minutes to allow them to set properly.
- Once firm, enjoy your nutritious power bites, and store any leftovers in an airtight container in the fridge for up to a week.
