  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts (optional, such as almonds or walnuts)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, salt, cardamom, and cocoa powder. Set aside.
  3. In a large mixing bowl, combine the granulated sugar, brown sugar, eggs, vanilla extract, and cooled espresso. Beat until well combined and slightly frothy.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips and nuts if using.
  5. Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide on the prepared baking sheet.
  6. Bake for 25-30 minutes, or until the logs are firm to the touch. Remove from the oven and let cool for 10 minutes.
  7. Carefully slice each log diagonally into 1/2-inch thick pieces. Place the slices cut side down back on the baking sheet.
  8. Bake for an additional 15-20 minutes, turning the biscotti halfway through, until they are crisp and dry.
