- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 3 large eggs
- 1 tablespoon vanilla extract
- 1/2 cup espresso or strong brewed coffee, cooled
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped nuts (optional, such as almonds or walnuts)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, salt, cardamom, and cocoa powder. Set aside.
- In a large mixing bowl, combine the granulated sugar, brown sugar, eggs, vanilla extract, and cooled espresso. Beat until well combined and slightly frothy.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips and nuts if using.
- Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide on the prepared baking sheet.
- Bake for 25-30 minutes, or until the logs are firm to the touch. Remove from the oven and let cool for 10 minutes.
- Carefully slice each log diagonally into 1/2-inch thick pieces. Place the slices cut side down back on the baking sheet.
- Bake for an additional 15-20 minutes, turning the biscotti halfway through, until they are crisp and dry.
- Allow the biscotti to cool completely on a wire rack before serving.
Notes
- For a spicier kick, add a pinch of black pepper to the dry ingredients.
- Substitute the chocolate chips with dried fruit like cranberries or cherries for a fruity twist.
