- 2 English muffins, split in half (makes 4 pizzas)
- 4 tablespoons pizza sauce or marinara
- 1/2 cup shredded mozzarella cheese
- 2 eggs
- 2 slices cooked bacon or sausage, crumbled (optional)
- 2 tablespoons chopped bell peppers or spinach (optional)
- Salt and pepper to taste
- Olive oil spray or a bit of butter (for the pan)
Instructions
- Preheat oven to 400°F (200°C) or set air fryer to 375°F (190°C).
- Toast the English muffins lightly if desired, then place on a baking sheet.
- Spread about 1 tablespoon of pizza sauce on each muffin half.
- Sprinkle with mozzarella and your choice of toppings (bacon, veggies, etc.).
- In a skillet, lightly fry the eggs until the whites are just set, or scramble them.
- Top each mini pizza with a bit of cooked egg.
- Bake for 8–10 minutes until cheese is melted and bubbly.
- Season with salt and pepper, and serve warm.
