Description

Elote Pizza is a delicious twist on traditional pizza, featuring a flavorful combination of corn, spices, and creamy toppings.


Ingredients

  • 2 cups pizza dough (store-bought or homemade)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
  2. In a skillet over medium heat, add olive oil and corn kernels. Sauté for about 5-7 minutes until the corn is slightly charred. Stir in chili powder, garlic powder, cumin, salt, and pepper. Remove from heat and set aside.
  3. Roll out the pizza dough on a floured surface to your desired thickness. Transfer it to a pizza stone or a baking sheet lined with parchment paper.
  4. Spread the sautéed corn mixture evenly over the pizza dough. Sprinkle mozzarella cheese on top.
  5. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  6. While the pizza is baking, mix mayonnaise and lime juice in a small bowl.
  7. Once the pizza is done, remove it from the oven and drizzle the lime mayonnaise over the top.
  8. Sprinkle cotija cheese and fresh cilantro over the pizza.
  9. Slice and serve with lime wedges on the side.

Notes

  • For a spicier kick, add sliced jalapeños on top before baking.
  • For a vegetarian twist, substitute the mozzarella with a dairy-free cheese alternative.
