Elote Pizza is a delicious twist on traditional pizza, featuring a flavorful combination of corn, spices, and creamy toppings.

- 2 cups pizza dough (store-bought or homemade)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 cup mozzarella cheese, shredded
- 1/2 cup cotija cheese, crumbled
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- Lime wedges for serving
Instructions
- Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
- In a skillet over medium heat, add olive oil and corn kernels. Sauté for about 5-7 minutes until the corn is slightly charred. Stir in chili powder, garlic powder, cumin, salt, and pepper. Remove from heat and set aside.
- Roll out the pizza dough on a floured surface to your desired thickness. Transfer it to a pizza stone or a baking sheet lined with parchment paper.
- Spread the sautéed corn mixture evenly over the pizza dough. Sprinkle mozzarella cheese on top.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
- While the pizza is baking, mix mayonnaise and lime juice in a small bowl.
- Once the pizza is done, remove it from the oven and drizzle the lime mayonnaise over the top.
- Sprinkle cotija cheese and fresh cilantro over the pizza.
- Slice and serve with lime wedges on the side.
Notes
- For a spicier kick, add sliced jalapeños on top before baking.
- For a vegetarian twist, substitute the mozzarella with a dairy-free cheese alternative.
