- 1 pound fresh green beans, trimmed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- Salt and pepper to taste
- 1/4 cup slivered almonds, toasted
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the green beans and blanch for about 3-4 minutes until bright green and tender-crisp.
- Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 5 minutes, then drain again and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the blanched green beans to the skillet and toss to coat in the garlic oil. Cook for an additional 2-3 minutes, stirring occasionally.
- Remove from heat and stir in the lemon zest, lemon juice, salt, and pepper.
- Transfer the green beans to a serving dish and sprinkle with toasted slivered almonds and grated Parmesan cheese if using.
Notes
- For a spicy kick, add a pinch of red pepper flakes when sautéing the garlic.
- Substitute the almonds with chopped walnuts or pecans for a different nutty flavor.
