Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 1/4 cup slivered almonds, toasted
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and blanch for about 3-4 minutes until bright green and tender-crisp.
  2. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 5 minutes, then drain again and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the blanched green beans to the skillet and toss to coat in the garlic oil. Cook for an additional 2-3 minutes, stirring occasionally.
  5. Remove from heat and stir in the lemon zest, lemon juice, salt, and pepper.
  6. Transfer the green beans to a serving dish and sprinkle with toasted slivered almonds and grated Parmesan cheese if using.

Notes

  • For a spicy kick, add a pinch of red pepper flakes when sautéing the garlic.
