- 2 cups all-purpose flour
- 1 ¾ cups granulated sugar
- ¾ cup unsweetened cocoa powder

- 1 cup buttermilk, room temperature
- ½ cup vegetable oil
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup hot water
- 1 tablespoon white vinegar
- 8 ounces cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons heavy cream (optional, for a thinner consistency)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
- In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
- Slowly add the wet ingredients to the dry ingredients, mixing until just combined.
- Carefully stir in the hot water and vinegar until the batter is smooth. The batter will be thin.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- While the cakes are cooling, prepare the cream cheese frosting by beating the softened cream cheese and butter together until creamy.
- Gradually add the powdered sugar and vanilla extract, mixing until smooth. If desired, add heavy cream to reach your preferred consistency.
- Once the cakes are completely cool, place one layer on a serving plate and spread a generous amount of cream cheese frosting on top.
- Place the second layer on top and frost the top and sides of the cake.
- Serve immediately or refrigerate for up to 3 days.
Notes
- For a richer flavor, try adding a tablespoon of espresso powder to the batter.
- You can substitute half of the all-purpose flour with almond flour for a slightly nutty taste and texture.
