  • ¾ cup unsweetened cocoa powder

  • 1 teaspoon baking powder

  • 1 cup buttermilk, room temperature
  • ½ cup vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup hot water
  • 1 tablespoon white vinegar
  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream (optional, for a thinner consistency)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Slowly add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Carefully stir in the hot water and vinegar until the batter is smooth. The batter will be thin.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  9. While the cakes are cooling, prepare the cream cheese frosting by beating the softened cream cheese and butter together until creamy.
  10. Gradually add the powdered sugar and vanilla extract, mixing until smooth. If desired, add heavy cream to reach your preferred consistency.
  11. Once the cakes are completely cool, place one layer on a serving plate and spread a generous amount of cream cheese frosting on top.
  12. Place the second layer on top and frost the top and sides of the cake.
  13. Serve immediately or refrigerate for up to 3 days.

Notes

  • For a richer flavor, try adding a tablespoon of espresso powder to the batter.
  • You can substitute half of the all-purpose flour with almond flour for a slightly nutty taste and texture.
