- 2 cups sparkling lemonade
- 1 cup elderflower syrup
- 2 tablespoons gelatin granules
- 1/4 cup chilled water
- 1/4 cup fresh mint leaves, finely chopped
- 1 lemon, zested and juiced
- Mint sprigs for decoration
Instructions
- Begin by combining the gelatin granules with the chilled water in a small bowl, allowing it to sit undisturbed for about 5 minutes until it swells.
- In a medium saucepan, mix the sparkling lemonade, elderflower syrup, lemon zest, and lemon juice. Warm the mixture over medium heat, ensuring it doesn’t reach a boil.
- Once warmed, take the saucepan off the heat and mix in the bloomed gelatin, stirring until it is completely dissolved.
- Fold in the finely chopped mint leaves, ensuring they are evenly distributed throughout the mixture.
- Carefully pour the mixture into a mold or individual dessert cups.
- Place in the refrigerator for a minimum of 4 hours, or until the jelly has fully set.
- After setting, gently remove the jelly from the mold or serve it directly in the cups. Top with fresh mint sprigs for a beautiful presentation.
Notes
