Egyptian Lentils, Rice, and Pasta Mix make Koshari Delight!

Description

A delicious and hearty Egyptian dish made with lentils, rice, and pasta, known as Koshari Delight.


Ingredients

  • 1 cup brown lentils, rinsed and drained
  • 1 cup long-grain rice, rinsed
  • 1 cup elbow macaroni
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 4 cups vegetable broth or water
  • Fresh parsley, chopped (for garnish)
  • Hot sauce (optional, for serving)

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.
  2. Incorporate the minced garlic and cook for an additional minute.
  3. Add the rinsed lentils and vegetable broth or water to the pot. Bring to a boil, then lower the heat and let it simmer for about 20 minutes, or until the lentils are tender.
  4. In another pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  5. In the same pot used for the macaroni, add the remaining tablespoon of olive oil and the rinsed rice. Toast the rice over medium heat for 2-3 minutes.
  6. Mix in the diced tomatoes, ground cumin, ground coriander, paprika, salt, and pepper.
  7. Pour in 2 cups of vegetable broth or water, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and liquid is absorbed.
  8. Combine the cooked lentils and rice in a large serving bowl, gently fold in the cooked macaroni, and adjust seasoning if needed.
  9. Serve hot, garnished with fresh parsley and a splash of hot sauce if desired.
