Description
A delicious and hearty Egyptian dish made with lentils, rice, and pasta, known as Koshari Delight.

- 1 cup brown lentils, rinsed and drained
- 1 cup long-grain rice, rinsed
- 1 cup elbow macaroni
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt and pepper to taste
- 3 tablespoons olive oil
- 4 cups vegetable broth or water
- Fresh parsley, chopped (for garnish)
- Hot sauce (optional, for serving)
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.
- Incorporate the minced garlic and cook for an additional minute.
- Add the rinsed lentils and vegetable broth or water to the pot. Bring to a boil, then lower the heat and let it simmer for about 20 minutes, or until the lentils are tender.
- In another pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
- In the same pot used for the macaroni, add the remaining tablespoon of olive oil and the rinsed rice. Toast the rice over medium heat for 2-3 minutes.
- Mix in the diced tomatoes, ground cumin, ground coriander, paprika, salt, and pepper.
- Pour in 2 cups of vegetable broth or water, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and liquid is absorbed.
- Combine the cooked lentils and rice in a large serving bowl, gently fold in the cooked macaroni, and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley and a splash of hot sauce if desired.
