Description

This easy, low-carb eggplant pizza recipe uses roasted eggplant as the base and is topped with sauce, cheese, and your favorite toppings. A delicious and healthy pizza alternative!


Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese

  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Slice the eggplant into 1/2-inch rounds, salt, and pat dry.
  3. Brush the eggplant slices with olive oil and roast for 15 minutes, flipping halfway through.
  4. Add pizza sauce, cheese, and toppings to the roasted eggplant.
  5. Broil for 3-5 minutes until the cheese is melted.
