Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Slice the eggplant into 1/2-inch rounds, salt, and pat dry.
- Brush the eggplant slices with olive oil and roast for 15 minutes, flipping halfway through.
- Add pizza sauce, cheese, and toppings to the roasted eggplant.
- Broil for 3-5 minutes until the cheese is melted.
