Delicious Egg-Stuffed Bell Peppers filled with a savory ground beef mixture, topped with eggs and cheese.

- 2 large bell peppers (any color)
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 2 tablespoons fresh parsley, chopped (optional for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
- In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet with the beef. Cook until the onion is translucent, about 3-4 minutes.
- Stir in the paprika, oregano, salt, and black pepper. Cook for an additional 1-2 minutes, then remove from heat.
- Spoon the beef mixture evenly into each bell pepper, packing it down slightly.
- Carefully crack an egg on top of the beef mixture in each bell pepper.
- Sprinkle shredded cheddar cheese over the eggs.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the eggs are set to your liking.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired before serving.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef mixture.
- Substitute ground turkey or chicken for a leaner option, or use a plant-based ground meat alternative for a vegetarian version.
