Description

Delicious Egg-Stuffed Bell Peppers filled with a savory ground beef mixture, topped with eggs and cheese.


Ingredients

  • 2 large bell peppers (any color)
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.
  4. Add the diced onion and minced garlic to the skillet with the beef. Cook until the onion is translucent, about 3-4 minutes.
  5. Stir in the paprika, oregano, salt, and black pepper. Cook for an additional 1-2 minutes, then remove from heat.
  6. Spoon the beef mixture evenly into each bell pepper, packing it down slightly.
  7. Carefully crack an egg on top of the beef mixture in each bell pepper.
  8. Sprinkle shredded cheddar cheese over the eggs.
  9. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the eggs are set to your liking.
  10. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired before serving.

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef mixture.
  • Substitute ground turkey or chicken for a leaner option, or use a plant-based ground meat alternative for a vegetarian version.
