A delicious and hearty Egg-Baked Meatloaf wrapped in beef suet, perfect for a family meal.

- 1 pound ground beef
- 1 pound ground pork
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 2 cloves garlic, minced
- 2 large eggs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 cup beef suet, shredded
- 4 large eggs (for baking in the meatloaf)
- 1/4 cup ketchup (for topping)
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, chopped onion, bell pepper, minced garlic, 2 large eggs, Worcestershire sauce, salt, black pepper, thyme, and oregano. Mix until well combined.
- Lay out a large piece of plastic wrap on a clean surface. Spread half of the meat mixture onto the plastic wrap, forming a rectangle about 1 inch thick.
- Make a well in the center of the meat mixture and crack the 4 large eggs into the well. Carefully fold the sides of the meat over the eggs to encase them fully, then shape the mixture into a loaf.
- Spread the shredded beef suet evenly over the top and sides of the meatloaf. Place the meatloaf in a baking dish and spread the ketchup over the top.
- Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F. Let it rest for 10 minutes before slicing.
Notes
- For a spicier version, add 1 teaspoon of red pepper flakes to the meat mixture.
- You can substitute the ground pork with ground turkey for a leaner option.
