A delicious and easy recipe for pumpkin soup paired with chipotle grilled cheese, perfect for a cozy meal.

- 2 cups pumpkin puree
- 1 cup vegetable broth
- 1 cup coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 slices of bread
- 4 slices of cheese (cheddar or your choice)
- 1 tablespoon chipotle sauce
Instructions
- In a large pot, sauté the chopped onion and minced garlic until translucent.
- Add the pumpkin puree, vegetable broth, coconut milk, cumin, smoked paprika, salt, and pepper. Stir well.
- Bring the mixture to a simmer and cook for about 15 minutes, stirring occasionally.
- While the soup is cooking, prepare the chipotle grilled cheese. Spread chipotle sauce on one side of each slice of bread.
- Place cheese between two slices of bread, chipotle side inwards, and grill on a skillet until golden brown and the cheese is melted.
- Once the soup is ready, blend it until smooth if desired.
- Serve the soup hot with the chipotle grilled cheese on the side.
Notes
- For a spicier soup, add more chipotle sauce.
- Garnish with pumpkin seeds or fresh herbs if desired.
- This soup can be made ahead and stored in the fridge for up to 3 days.
