Ingredients

  • 2 cups pumpkin puree
  • 1 cup vegetable broth
  • 1 cup coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 slices of bread
  • 4 slices of cheese (cheddar or your choice)
  • 1 tablespoon chipotle sauce

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the pumpkin puree, vegetable broth, coconut milk, cumin, smoked paprika, salt, and pepper. Stir well.
  3. Bring the mixture to a simmer and cook for about 15 minutes, stirring occasionally.
  4. While the soup is cooking, prepare the chipotle grilled cheese. Spread chipotle sauce on one side of each slice of bread.
  5. Place cheese between two slices of bread, chipotle side inwards, and grill on a skillet until golden brown and the cheese is melted.
  6. Once the soup is ready, blend it until smooth if desired.
  7. Serve the soup hot with the chipotle grilled cheese on the side.

Notes

  • For a spicier soup, add more chipotle sauce.
  • Garnish with pumpkin seeds or fresh herbs if desired.
