- 3 cups cooked rice (preferably day-old)
- 1 cup fresh pineapple, diced
- 1 small onion, diced
- 1 bell pepper, diced
- 1 medium carrot, diced
- 2–3 tbsp soy sauce
- 2 eggs, beaten
- 2 garlic cloves, minced
- 1 tsp grated ginger
- 2 tbsp vegetable oil
- 2–3 green onions, chopped
- Optional: Shrimp, chicken, or tofu
Instructions
- Heat 1 tbsp oil in a large skillet over medium-high heat. Add onion, bell pepper, and carrot. Stir-fry for 3-4 minutes until slightly softened.
- Add garlic and ginger, cook for 1 minute.
- Stir in pineapple and cook for 2-3 minutes until caramelized.
- Push vegetables to the side and scramble the beaten eggs.
- Add cooked rice and soy sauce, stir-fry for 3-4 minutes until heated through.
- Stir in green onions and any cooked protein (if using). Adjust seasoning and serve.

- Use day-old rice for the best texture.
