Ingredients

  • 3 cups cooked rice (preferably day-old)
  • 1 cup fresh pineapple, diced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 medium carrot, diced
  • 23 tbsp soy sauce
  • 2 eggs, beaten
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 2 tbsp vegetable oil
  • 23 green onions, chopped
  • Optional: Shrimp, chicken, or tofu

Instructions

  • Heat 1 tbsp oil in a large skillet over medium-high heat. Add onion, bell pepper, and carrot. Stir-fry for 3-4 minutes until slightly softened.
  • Add garlic and ginger, cook for 1 minute.
  • Stir in pineapple and cook for 2-3 minutes until caramelized.
  • Push vegetables to the side and scramble the beaten eggs.
  • Add cooked rice and soy sauce, stir-fry for 3-4 minutes until heated through.
  • Stir in green onions and any cooked protein (if using). Adjust seasoning and serve.
