- 4 cups sliced fresh or frozen peaches (thawed and drained if frozen)
- 1 cup fresh raspberries
- 1/2 cup sugar (adjust depending on fruit sweetness)
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 cup sugar (for the topping)
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (1 stick) butter, melted
- 1 cup milk
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a bowl, gently toss peaches and raspberries with 1/2 cup sugar, lemon juice, and vanilla. Set aside.
- In another bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
- Stir in milk until just combined. Then stir in the melted butter (the batter will be thin).
- Pour the batter into the prepared baking dish.
- Spoon the fruit mixture evenly over the batter — don’t stir! The batter will rise around the fruit as it bakes.
- Bake for 40–45 minutes, or until golden brown and a toothpick inserted into the cake part comes out clean.
- Cool slightly before serving. Best enjoyed warm with a scoop of vanilla ice cream!
Notes
- No fresh peaches? Use canned (drained) or frozen (thawed and drained) peaches!
- Add a pinch of cinnamon for a cozy twist.
