Description

A delightful and easy-to-make cobbler featuring juicy peaches and fresh raspberries, perfect for a warm dessert treat.


Ingredients

  • 4 cups sliced fresh or frozen peaches (thawed and drained if frozen)
  • 1 cup fresh raspberries
  • 1/2 cup sugar (adjust depending on fruit sweetness)
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup sugar (for the topping)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (1 stick) butter, melted
  • 1 cup milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a bowl, gently toss peaches and raspberries with 1/2 cup sugar, lemon juice, and vanilla. Set aside.
  3. In another bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
  4. Stir in milk until just combined. Then stir in the melted butter (the batter will be thin).
  5. Pour the batter into the prepared baking dish.
  6. Spoon the fruit mixture evenly over the batter — don’t stir! The batter will rise around the fruit as it bakes.
  7. Bake for 40–45 minutes, or until golden brown and a toothpick inserted into the cake part comes out clean.
  8. Cool slightly before serving. Best enjoyed warm with a scoop of vanilla ice cream!

Notes

  • No fresh peaches? Use canned (drained) or frozen (thawed and drained) peaches!
  • Add a pinch of cinnamon for a cozy twist.
