- 4 cloves garlic, minced
- 3 cups vegetable or chicken broth
- 1 cup milk (whole or 2%)
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest (optional)
- Salt and pepper to taste
- 2 tablespoons chopped parsley (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add uncooked pasta, broth, and milk. Stir and bring to a boil.
- Reduce heat and simmer uncovered, stirring often, for 10–12 minutes or until pasta is tender and liquid is mostly absorbed.
- Stir in Parmesan cheese, lemon juice, and lemon zest. Mix until creamy and smooth.
- Season with salt and pepper to taste.
- Garnish with chopped parsley and extra cheese if desired.
