- 1 cup powdered sugar

- 1 cup graham cracker crumbs
- 1/2 cup shredded coconut (optional)
- Extra chopped pistachios for rolling
Instructions
- In a mixing bowl, combine the finely chopped pistachios, softened cream cheese, powdered sugar, and vanilla extract. Mix until well combined.
- Gradually add the graham cracker crumbs to the mixture, stirring until everything is evenly incorporated. If using, fold in the shredded coconut.
- Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used, placing the balls on a baking sheet lined with parchment paper.
- Once all the balls are formed, roll each one in extra chopped pistachios to coat.
- Refrigerate the pistachio balls for at least 30 minutes to firm up before serving.
- Serve chilled or at room temperature.
