Ingredients

  • 1 cup shelled pistachios, finely chopped
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup graham cracker crumbs
  • 1/2 cup shredded coconut (optional)
  • Extra chopped pistachios for rolling

Instructions

  1. In a mixing bowl, combine the finely chopped pistachios, softened cream cheese, powdered sugar, and vanilla extract. Mix until well combined.
  2. Gradually add the graham cracker crumbs to the mixture, stirring until everything is evenly incorporated. If using, fold in the shredded coconut.
  3. Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used, placing the balls on a baking sheet lined with parchment paper.
  4. Once all the balls are formed, roll each one in extra chopped pistachios to coat.
  5. Refrigerate the pistachio balls for at least 30 minutes to firm up before serving.
  6. Serve chilled or at room temperature.
