Ingredients

  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 lemon (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a large mixing bowl, combine the Greek yogurt and granulated sugar. Whisk until smooth and well combined.
  3. Add the vegetable oil, eggs, and vanilla extract to the yogurt mixture. Whisk until fully incorporated.
  4. In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. If using lemon zest, add it to the dry ingredients.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
