- 1 lb thinly sliced beef (such as sirloin or ribeye)
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 medium bell pepper, thinly sliced
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 ounces cream cheese, softened
- 1 cup shredded provolone cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 package (8 oz) of low-carb tortillas
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the sliced onion and bell pepper, cooking until softened, about 5-7 minutes.
- Stir in garlic powder, salt, and pepper. Remove from heat and let cool slightly.
- In a mixing bowl, combine the softened cream cheese, provolone cheese, mozzarella cheese, Worcestershire sauce, and Dijon mustard. Mix until well combined.
- Lay out a low-carb tortilla on a flat surface. Spread a generous layer of the cheese mixture over the tortilla, followed by a portion of the cooked beef and vegetable mixture.
- Roll the tortilla tightly, then slice into pinwheels or leave whole.
- Preheat your oven to 375°F.
- Place the roll-ups on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until the cheese is bubbly and the edges are golden brown.
- Let cool for a few minutes before serving. Enjoy warm!
