  • 1 medium bell pepper, thinly sliced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 ounces cream cheese, softened
  • 1 cup shredded provolone cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 package (8 oz) of low-carb tortillas

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the sliced onion and bell pepper, cooking until softened, about 5-7 minutes.
  3. Stir in garlic powder, salt, and pepper. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the softened cream cheese, provolone cheese, mozzarella cheese, Worcestershire sauce, and Dijon mustard. Mix until well combined.
  5. Lay out a low-carb tortilla on a flat surface. Spread a generous layer of the cheese mixture over the tortilla, followed by a portion of the cooked beef and vegetable mixture.
  6. Roll the tortilla tightly, then slice into pinwheels or leave whole.
