  • 1/4 cup erythritol (or your favorite keto sweetener)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blackberries
  • 1/2 cup shelled pistachios, roughly chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by lining it with parchment paper.
  2. In a spacious bowl, whisk together the almond flour, cocoa powder, erythritol, baking powder, and salt until well combined.
  3. Pour in the melted butter, crack in the egg, and add the vanilla extract; mix these wet ingredients into the dry mixture until a thick batter forms.
  4. Carefully incorporate the fresh blackberries and chopped pistachios into the batter, keeping the blackberries intact as much as possible.
  5. Transfer the mixture into the prepared baking dish, smoothing it out evenly, and drizzle the lemon juice on top.
  6. Bake for approximately 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool in the pan for about 10 minutes, then use the parchment paper to lift them out.
  8. Let them cool completely on a wire rack before cutting into squares.
