- 1 teaspoon vanilla extract
- 1 cup fresh blackberries
- 1/2 cup shelled pistachios, roughly chopped
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by lining it with parchment paper.
- In a spacious bowl, whisk together the almond flour, cocoa powder, erythritol, baking powder, and salt until well combined.
- Pour in the melted butter, crack in the egg, and add the vanilla extract; mix these wet ingredients into the dry mixture until a thick batter forms.
- Carefully incorporate the fresh blackberries and chopped pistachios into the batter, keeping the blackberries intact as much as possible.
- Transfer the mixture into the prepared baking dish, smoothing it out evenly, and drizzle the lemon juice on top.
- Bake for approximately 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 10 minutes, then use the parchment paper to lift them out.
- Let them cool completely on a wire rack before cutting into squares.
