- 4 cups almond milk
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup brewed coffee
- 2 tablespoons gelatin
- 1/4 cup cocoa powder
- 1/2 cup whipped cream (optional)
Instructions
- In a bowl, mix chia seeds, almond milk, maple syrup, and vanilla extract. Stir well and let it sit for 10 minutes.
- Stir the mixture again to prevent clumping and refrigerate for at least 4 hours or overnight.
- To make the coffee jelly, dissolve gelatin in brewed coffee and let it cool until set.
- Once the chia pudding is set, layer it in serving glasses with coffee jelly and cocoa powder.
- Top with whipped cream if desired and serve chilled.
