Instructions

  1. In a bowl, mix chia seeds, almond milk, maple syrup, and vanilla extract. Stir well and let it sit for 10 minutes.
  2. Stir the mixture again to prevent clumping and refrigerate for at least 4 hours or overnight.
  3. To make the coffee jelly, dissolve gelatin in brewed coffee and let it cool until set.
  4. Once the chia pudding is set, layer it in serving glasses with coffee jelly and cocoa powder.
  5. Top with whipped cream if desired and serve chilled.
