- 1 cup dried navy beans (or 2 cans, drained and rinsed)
- 8 ounces diced ham
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Rinse the dried beans under cold water and soak them in a large bowl overnight. If using canned beans, drain and rinse them.
- In a large pot, warm the olive oil over medium heat.
- Add the chopped onion, carrots, and celery, cooking for about 5 minutes until they soften.
- Incorporate the minced garlic and sauté for an additional minute until it releases its aroma.
- Introduce the diced ham along with the soaked (or canned) beans, chicken broth, thyme, bay leaf, salt, and pepper.
- Allow the mixture to come to a vigorous boil.
- Once boiling, lower the heat, cover the pot, and let it simmer.
- If using dried beans, simmer for 1 to 1.5 hours; if using canned beans, 30 minutes should suffice, until the beans reach a tender consistency.
- Before serving, remove the bay leaf and taste for seasoning, adjusting with salt and pepper as necessary.
- Serve the soup hot, garnished with fresh parsley if desired.

- This recipe serves 6.
- For a quicker option, canned beans can be used instead of dried beans.
