Ingredients

  • 1 cup dried navy beans (or 2 cans, drained and rinsed)
  • 8 ounces diced ham
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Rinse the dried beans under cold water and soak them in a large bowl overnight. If using canned beans, drain and rinse them.
  2. In a large pot, warm the olive oil over medium heat.
  3. Add the chopped onion, carrots, and celery, cooking for about 5 minutes until they soften.
  4. Incorporate the minced garlic and sauté for an additional minute until it releases its aroma.
  5. Introduce the diced ham along with the soaked (or canned) beans, chicken broth, thyme, bay leaf, salt, and pepper.
  6. Allow the mixture to come to a vigorous boil.
  7. Once boiling, lower the heat, cover the pot, and let it simmer.
  8. If using dried beans, simmer for 1 to 1.5 hours; if using canned beans, 30 minutes should suffice, until the beans reach a tender consistency.
  9. Before serving, remove the bay leaf and taste for seasoning, adjusting with salt and pepper as necessary.
  10. Serve the soup hot, garnished with fresh parsley if desired.
