Easy Garlic Butter Meatballs served over creamy Parmesan linguine.

- 1 pound ground beef
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped (optional)
- 4 tablespoons unsalted butter
- 1/2 cup beef broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese (for sauce)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon red pepper flakes (optional)
- 1 medium zucchini, spiralized or 8 ounces of shirataki noodles (rinsed and drained)
- 1 tablespoon olive oil
Instructions
- In a large bowl, combine ground beef, almond flour, 1/4 cup Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and black pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter. You should get around 20 meatballs.
- In a large skillet over medium heat, melt 2 tablespoons of butter. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter, beef broth, heavy cream, 1/2 cup Parmesan cheese, garlic powder, onion powder, and red pepper flakes. Stir until the sauce is smooth and heated through.
- Return the meatballs to the skillet and simmer in the sauce for another 5 minutes, allowing the flavors to meld.
- In a separate pan, heat olive oil over medium heat. Add the spiralized zucchini or shirataki noodles and sauté for 2-3 minutes until just tender.
- Serve the meatballs over the zucchini or shirataki noodles, drizzled with the creamy Parmesan sauce. Garnish with chopped parsley if desired.
Notes
- For added flavor, mix in some chopped spinach or kale into the meatball mixture.
- If you prefer a spicier kick, add more red pepper flakes or a dash of hot sauce to the creamy sauce.
- Serve with keto-friendly sides like pork rinds, celery sticks, or cucumber slices for a complete meal.
