Ingredients

  • 1 pound ground beef
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (optional)
  • 4 tablespoons unsalted butter
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese (for sauce)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 medium zucchini, spiralized or 8 ounces of shirataki noodles (rinsed and drained)
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, combine ground beef, almond flour, 1/4 cup Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and black pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter. You should get around 20 meatballs.
  3. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
  4. In the same skillet, add the remaining 2 tablespoons of butter, beef broth, heavy cream, 1/2 cup Parmesan cheese, garlic powder, onion powder, and red pepper flakes. Stir until the sauce is smooth and heated through.
  5. Return the meatballs to the skillet and simmer in the sauce for another 5 minutes, allowing the flavors to meld.
  6. In a separate pan, heat olive oil over medium heat. Add the spiralized zucchini or shirataki noodles and sauté for 2-3 minutes until just tender.
  7. Serve the meatballs over the zucchini or shirataki noodles, drizzled with the creamy Parmesan sauce. Garnish with chopped parsley if desired.

Notes

  • For added flavor, mix in some chopped spinach or kale into the meatball mixture.
  • If you prefer a spicier kick, add more red pepper flakes or a dash of hot sauce to the creamy sauce.
