Delight your guests with these Easy Christmas Fruitcake Cookies, perfect for the holiday season!

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mixed dried fruit (such as raisins, cranberries, and chopped apricots)
  • 1 cup chopped nuts (such as walnuts or pecans)
  • 1/2 cup candied cherries, chopped
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract and mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the mixed dried fruit, chopped nuts, candied cherries, and white chocolate chips if using.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Notes

  • For a festive twist, try adding 1 teaspoon of orange or lemon zest to the dough for a citrusy flavor.
  • You can also substitute the mixed dried fruit with your favorite dried fruits or chocolate chips for a different taste.
