  • 1 cup chopped nuts (such as walnuts or pecans)
  • 1/2 cup candied citrus peel (optional)
  • 1/2 cup powdered sugar (for icing)
  • 2 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.
  6. Fold in the mixed dried fruit, chopped nuts, and candied citrus peel if using.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the icing, whisk together the powdered sugar and milk until smooth. Drizzle over the cooled cake before slicing.
