Ingredients

  • 2 large heads of garlic
  • 2 tablespoons extra virgin olive oil
  • 1 pound store-bought pizza dough
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 teaspoon mixed Italian seasoning
  • 1/4 teaspoon crushed red pepper (optional)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup melted unsalted butter
  • 1 tablespoon freshly chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut off the tops of the garlic heads to reveal the cloves, drizzle with olive oil, and wrap in aluminum foil.
  3. Roast the garlic in the oven for about 30-35 minutes until tender and golden.
  4. Allow the garlic to cool slightly, then squeeze the soft garlic into a bowl and mash until smooth.
  5. Roll out the pizza dough on a floured surface into a rectangle approximately 1/4 inch thick.
  6. Spread the mashed roasted garlic evenly across the dough, then layer with mozzarella and cheddar cheese.
  7. Sprinkle Italian seasoning, crushed red pepper, salt, and black pepper over the cheese.
  8. Slice the dough into 1-inch wide strips, stack them, and cut into square pieces.
  9. Grease a 9×5-inch loaf pan and arrange the dough squares upright in the pan.
  10. Drizzle melted butter over the top of the dough.
  11. Cover the loaf pan with a kitchen towel and let it rise in a warm area for about 20-30 minutes.
  12. Bake in the preheated oven for 25-30 minutes until golden brown and bubbling.
  13. Allow to cool for a few minutes, garnish with parsley, and serve warm.
