Ingredients

  • 2 large cucumbers, thinly sliced
  • ½ teaspoon salt
  • 1 tablespoon sesame seeds
  • 1 green onion, thinly sliced
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Toss cucumber slices with salt and let sit for 10 minutes. Drain excess water.
  2. In a bowl, whisk together vinegar, soy sauce, sesame oil, sugar, and red pepper flakes.
  3. Add cucumbers, sesame seeds, and green onion. Toss to coat.
  4. Chill for 15–30 minutes before serving.
