A refreshing and easy-to-make Asian cucumber salad that is perfect for any meal.
Ingredients

- 2 large cucumbers, thinly sliced
- ½ teaspoon salt
- 1 tablespoon sesame seeds
- 1 green onion, thinly sliced
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- ½ teaspoon red pepper flakes (optional)
Instructions
- Toss cucumber slices with salt and let sit for 10 minutes. Drain excess water.
- In a bowl, whisk together vinegar, soy sauce, sesame oil, sugar, and red pepper flakes.
- Add cucumbers, sesame seeds, and green onion. Toss to coat.
- Chill for 15–30 minutes before serving.
Notes
- Adjust the amount of red pepper flakes to taste.
- This salad can be made ahead of time and stored in the refrigerator.
