Ingredients

  • 1 cup pitted Medjool dates (about 1215 dates)
  • 1 cup raw almonds
  • 1/2 cup rolled oats
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
  2. In a food processor, combine the pitted dates, raw almonds, rolled oats, and sea salt. Pulse until the mixture is well combined and sticky, but still has some texture.
  3. Transfer the mixture to the prepared baking dish. Press it down firmly and evenly using your hands or a spatula to create a compact layer.
  4. Bake in the preheated oven for 15-20 minutes, or until the edges are slightly golden. Remove from the oven and let it cool completely in the pan.
  5. Once cooled, lift the bars out using the parchment overhang and cut into squares or rectangles.

Notes

  • For added flavor, consider mixing in 1/4 cup of unsweetened shredded coconut or a teaspoon of vanilla extract before processing.
