  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/2 cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large baking dish, spread the riced cauliflower evenly across the bottom.
  3. In a mixing bowl, combine the Greek yogurt, diced cucumber, dill, lemon juice, garlic, salt, pepper, and paprika. Mix well to create the tzatziki sauce.
  4. Place the chicken thighs on top of the riced cauliflower.
  5. Drizzle the olive oil over the chicken and season with additional salt and pepper if desired.
  6. Spread the tzatziki sauce evenly over the chicken thighs, ensuring they are well coated.
  7. If using, sprinkle the shredded mozzarella cheese on top.
  8. Cover the baking dish with aluminum foil and bake for 30 minutes.
  9. After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  10. Let it cool for a few minutes before serving.
