- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon salt

Instructions
- Preheat the oven to 375°F.
- In a large baking dish, spread the riced cauliflower evenly across the bottom.
- In a mixing bowl, combine the Greek yogurt, diced cucumber, dill, lemon juice, garlic, salt, pepper, and paprika. Mix well to create the tzatziki sauce.
- Place the chicken thighs on top of the riced cauliflower.
- Drizzle the olive oil over the chicken and season with additional salt and pepper if desired.
- Spread the tzatziki sauce evenly over the chicken thighs, ensuring they are well coated.
- If using, sprinkle the shredded mozzarella cheese on top.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Let it cool for a few minutes before serving.
