  • 1/4 cup grated Parmesan cheese
  • Fresh chives, chopped (for garnish)

Instructions

  1. In a mixing bowl, crack the duck eggs and whisk them together with the heavy cream, truffle oil, salt, and black pepper until well combined and slightly frothy.
  2. Heat a non-stick skillet over medium heat and add the unsalted butter. Allow it to melt and coat the bottom of the pan.
  3. Pour the egg mixture into the skillet, tilting the pan to ensure the eggs spread evenly.
  4. Cook the omelet for about 3-4 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow underneath.
  5. Once the eggs are mostly set but still slightly runny on top, sprinkle the grated Parmesan cheese over one half of the omelet.
  6. Carefully fold the other half of the omelet over the cheese and cook for an additional 1-2 minutes until the cheese is melted and the omelet is cooked through.
  7. Slide the omelet onto a plate and drizzle with extra truffle oil if desired. Garnish with chopped chives before serving.
