- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1/4 cup grated Parmesan cheese
- Fresh chives, chopped (for garnish)
Instructions
- In a mixing bowl, crack the duck eggs and whisk them together with the heavy cream, truffle oil, salt, and black pepper until well combined and slightly frothy.
- Heat a non-stick skillet over medium heat and add the unsalted butter. Allow it to melt and coat the bottom of the pan.
- Pour the egg mixture into the skillet, tilting the pan to ensure the eggs spread evenly.
- Cook the omelet for about 3-4 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow underneath.
- Once the eggs are mostly set but still slightly runny on top, sprinkle the grated Parmesan cheese over one half of the omelet.
- Carefully fold the other half of the omelet over the cheese and cook for an additional 1-2 minutes until the cheese is melted and the omelet is cooked through.
- Slide the omelet onto a plate and drizzle with extra truffle oil if desired. Garnish with chopped chives before serving.

- For a heartier omelet, add sautéed mushrooms or spinach before folding.
