Ingredients

- 2 cups dragon fruit puree
- 1 cup water
- 1 cup sugar
- 2 tablespoons gelatin powder
- 1 teaspoon lemon juice
- Food coloring (optional)
Instructions
- In a saucepan, combine the dragon fruit puree, water, and sugar. Heat over medium heat until the sugar dissolves.
- In a small bowl, sprinkle the gelatin powder over the lemon juice and let it bloom for 5 minutes.
- Add the bloomed gelatin to the warm dragon fruit mixture and stir until fully dissolved.
- If desired, add food coloring to achieve the desired hue.
- Pour the mixture into molds and refrigerate for at least 4 hours or until set.
- Once set, carefully remove the jellies from the molds and serve.
Notes
- For a more vibrant color, use ripe dragon fruit.
- These jellies can be stored in an airtight container in the refrigerator for up to a week.
