Ingredients

- 2 ripe dragon fruits, peeled and diced
- 1 cucumber, peeled and diced
- 1 red bell pepper, diced
- 1 small red onion, diced
- 2 cups tomato juice
- 2 tablespoons lime juice
- 1 tablespoon honey
- Salt and pepper to taste
- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 lime, zested
Instructions
- In a blender, combine dragon fruit, cucumber, red bell pepper, red onion, tomato juice, lime juice, honey, salt, and pepper. Blend until smooth.
- Chill the gazpacho in the refrigerator for at least 30 minutes.
- In a skillet, heat olive oil over medium heat. Add shrimp, chili powder, lime zest, salt, and pepper.
- Cook shrimp for 2-3 minutes on each side until pink and cooked through.
- Serve the chilled gazpacho in bowls, topped with the chili-lime shrimp.
Notes
- Adjust the sweetness by adding more or less honey based on your preference.
- For a spicier kick, add diced jalapeños to the gazpacho.
- Garnish with fresh cilantro for added flavor.
