  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1/2 cup almond flour
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 cup crushed keto-friendly cheese-flavored chips (like pork rinds or a keto-friendly brand)
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes (canned, drained)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, egg, cheddar cheese, almond flour, Worcestershire sauce, salt, black pepper, smoked paprika, chili powder, and cumin. Mix until well combined.
  3. Transfer the meat mixture to a greased 9×13-inch casserole dish and shape it into a loaf.
  4. Spread the diced tomatoes evenly over the top of the meatloaf.
  5. In a small bowl, mix the sour cream with half of the crushed cheese-flavored chips. Spread this mixture over the top of the meatloaf.
  6. Sprinkle the remaining crushed chips over the top of the casserole.
  7. Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F.
  8. Let the casserole rest for 10 minutes before slicing. Serve with keto-friendly sides like celery sticks or cucumber slices.
