Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, combine flour and powdered sugar.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Stir in the egg yolk and enough cold water to form a dough.
- Press the dough into a 9-inch tart pan and prick the bottom with a fork.
- Bake for 15-20 minutes or until lightly golden. Let cool.
- In a saucepan, whisk together sugar, cornstarch, and salt.
- Gradually add water and cook over medium heat, stirring constantly until thickened and bubbly.
- Reduce heat and stir a small amount of the hot mixture into the beaten egg yolks, then return it to the saucepan.
- Stir in lemon zest, lemon juice, and butter. Cook for an additional 2 minutes, stirring constantly.
- Pour the filling into the cooled tart shell.
- For the meringue, beat egg whites and cream of tartar in a clean bowl until soft peaks form.
- Gradually add sugar, continuing to beat until stiff peaks form.
- Spread the meringue over the lemon filling, sealing the edges.
- Bake the tart for an additional 10-12 minutes or until the meringue is golden brown.
- Allow to cool at room temperature for at least 1 hour before serving.
Notes
- For a twist, try adding a teaspoon of vanilla extract to the lemon filling for extra flavor.
- If you prefer a less sweet meringue, reduce the sugar in the meringue to ⅓ cup.
